So I have been home all day and really wanted some cookies…I can’t eat gluten but I have plenty of gluten free flours…what I don’t have ? …milk or eggs…so I searched through dozens of my cookie recipes and even no bake cookies needed milk…so…I threw some stuff together and they actually turned out yummy so I wanted to share 🙂
They don’t look the prettiest but the sample I had before placing them in the freezer was yummy.
2 cups raw sugar
4 tablespoons Dutch processed baking cocoa
1 stick butter
1/2 cup water
2 and 1/2 cups quick oats (I can eat regular quick oats without a reaction but assume gf oats would work perfectly).
1 cup natural peanut butter
1 teaspoon pure vanilla extract
Put sugar, cocoa, butter and water in saucepan and start to stir. Bring to boil. Boil 2 minutes. Turn off heat and remove pan from burner. Add oats and stir. Add peanut butter and vanilla. Mix well.
Put teaspoonful dollops on wax paper on a cookie sheet…let cool. I put mine in the freezer til chilled. I have stored them in the freezer since they turned out a bit softer than other cookies, but they are very tasty chilled!
